GROUND MEAT PATTIES WITH
CREAMY MUSHROOM SAUCE

Serves 4
Patties:
1.1 lb ground meat (beef/pork is what I normally use)
0.2 cup dried breadcrumbs
0.4 cup regular milk
1 egg
½ grated onion
1 grated garlic clove
1 teaspoon salt
some black pepper
3 tablespoons finely chopped parsley
3 tablespoons butter
Mushroom sauce:
10½ oz mushrooms of your choice
1 onion
1 tablespoon butter
1 tablespoon flour
1.6 cups water
1.2 cups heavy cream
2 tablespoons concentrated veal fond
1 teaspoon salt
some black pepper
Decoration:
fresh herbs, e.g. thyme
lingonberries
mushrooms (optional)
Mix breadcrumbs, milk, egg, grated onion and garlic, salt, pepper and parsley in a bowl. Leave to swell for about 5 minutes, then work it into the ground meat. Divide in 8 equally sized pieces and shape to 8 patties. Heat up the butter and Brown them on both sides.
Mushroom sauce:
Trim the mushrooms and split them if necessary. Peel and finely chop the onion. Heat up the butter and sauté mushrooms and onion until glossy and tender. Reserve some mushrooms for decoration if you wish. Sift with the flour, stir and then pour in water, cream and veal fond. Simmer it all for about 5 minutes.
Place the ground meat patties in the sauce and simmer for 8 to 10 minutes until the patties are done. Flavor to taste with salt and pepper. Decorate with green herbs and sprinkle with whole lingonberries and optional mushrooms when serving.
Serve with boiled potatoes or potato wedges and lingonberry jam.
