SALMON WITH APPLE SAUCE
AND POMEGRANATE
Lax med äppelsås och granatäpple
Serves 2
10½ oz salmon fillets
½ tablespoon butter
salt, black pepper
Apple sauce:
0.4 cup apple juice
1 tablespoon runny honey
2 teaspoons white balsamic vinegar
½ teaspoon whole coriander seeds,
crushed
For serving:
10½ oz broccoli
½ pomegranate
0.4 cup cooking yogurt
Sauce:
Boil (reduce) the apple juice until half of it remains in a small saucepan. Add honey, vinegar and coriander seeds, bring to a boil and allow to cool.
Fry the salmon until nicely colored in butter. Lower the heat, cover the frying pan and continue frying to an inner temperature of 118F. Flavor with salt and pepper. Split the broccoli in florets and boil in well salted water for about 3 minutes. Peel and slice the stem (lots of taste and nutrients there!) and boil that as well.
Serve the salmon with broccoli and pomegranate seeds, drizzle with the apple sauce and serve the yogurt with it.
