LEMON BASIL PASTA WITH PARMESAN
Citronpasta med parmesan och basilika
Serves 4
2 eggs
1.6 cup grated Parmesan cheese
1 bunch fresh basil
2 lemons
1 teaspoon salt
some pepper
1.1 lb fettuccine pasta, fresh
(to minimize the cooking time)
Separate the eggs and put the yolks in a bowl. Add grated cheese, chopped basil, grated lemon zest and fresh lemon juice, salt and pepper and blend. Boil the pasta in lightly salted water for a few minutes.
Mix the hot pasta with the lemon mixture and 2 tablespoons of the pasta water.
Serve with green salad and tomatoes.
