LEMON BUNS WITH BUTTER AND JAM
Släta citronbullar med smör och sylt

36 buns

Buns:
1.7 oz fresh active compressed yeast
5½ oz butter
2 cups regular milk
0.4 cup sugar
½ teaspoon salt
6 cups flour
1 egg for brushing

Flavoring:
finely grated zest from 2 lemons


Crumble the yeast in a mixing bowl. Melt the fat and add the milk, heat to 99F and dissolve the yeast in the liquid. Add sugar, salt and lemon zest, stir in the flour and work the dough until smooth and pliable, about 10 minutes. Leave to rise under a baking cloth for 40 minutes. 

Unmould onto a floured work surface and cut the dough in 36 equally sized pieces. Roll to balls and put them on baking paper. Leave to rise under a baking cloth for about 25 minutes. Heat the oven to 437F. Brush with beaten egg and bake in the middle of the oven for 10 to 15 minutes. Cool on a rack under a cloth.

Serve with butter and your favorite jam.
