MEAT LOAF WITH CHANTARELLE SAUCE

Serves 6
Meat loaf:
3 tablespoons dried breadcrumbs
0.4 cup regular milk
1 onion
1 tablespoon butter or margarine
1.1 lb ground meat (beef/pork)
1 egg
salt, pepper
4½ oz cream cheese, e.g. paprika/chili
9 cherry tomatoes
Chantarelle sauce:
5½ oz chantarelles
½ onion
2 tablespoons butter or margarine
2 tablespoons flour
1.2 cup regular milk
0.4 cup heavy cream
2 tablespoons veal fond
For serving:
boiled potatoes
boiled carrots
Preheat oven to 392F.
Mix breadcrumbs and milk in a bowl and leave to thicken for 5 minutes. Peel and chop the onion and sauté until tender in butter. Blend the onion into the bread together with ground meat, egg, salt and pepper. Flatten it out to a rectangle and spread a string of cream cheese down along the middle. Shape the meat into a loaf and transfer to a greased, oven-proof pan. Split the tomatoes and attach them on top of the meat loaf, then cook in the oven for about 40 minutes.
Chantarelle sauce:
Sauté chantarelles and chopped onions in a saucepan with butter. Sprinkle with flour and dilute with milk and cream. Bring to a boil and let boil for 5 minutes. Flavor to taste with veal fond, salt and pepper.
Serve with potatoes and carrots.
