MAZARIN CARDAMOM APPLE CAKE
Mazarinäppelkaka med kardemumma

1 cake, 8 pieces

Pie dough:
4½ oz butter
1.2 cups flour
0.4 cup powdered sugar
1 egg yolk

Fyllning:
5 apples
fresh juice from 1 lemon
0.4 cup sugar

Mazarin filling:
5½ oz room-tempered butter
0.8 cup sugar
2 eggs
1½ teaspoon vanilla sugar
1½ teaspoon baking powder
1 teaspoon ground or crushed cardamom
1.2 cups almond flour
grated zest from 1 lemon

Decoration:
crushed nib sugar


Preheat oven to 347F.

Mix all ingredients for the pie dough in a mixing bowl. The dough should be smooth and levelled. Place it in a greased, floured springform pan, diameter approx 9 inches. Make sure it covers the sides a bit too. Place in the fridge while you make the filling.

Peel, core and cut the apples in half. Place them with the cupped side up and make cuts in 7 of the halves but don't cut all the way through, like when you make Hasselback potatoes. Mix lemon juice and sugar and pour this over the apples so that it trickles down into the cuts. Cut remaining 3 apple halves in wedges. 

Stir butter and sugar to the mazarin filling. Add the eggs, one at a time, and stir well between each. Add remaining ingredients. Place the apple wedges on top of the pie crust, pour the almond filling over them and add the 7 cut apple halves, cupped side up. Sprinkle with some crushed nib sugar.

Bake just below the middle of the oven for about 50 minutes. Cover with aluminum foil if the cake gets too dark after 30 minutes.
