ORANGE CUPS WITH COCONUT

Dough:
1.2 cups flour
3½ oz butter
3 tablespoons sugar
1 small egg
Filling:
2½ oz butter
0.4 cup sugar
2 eggs
0.3 cup concentrated orange juice
0.2 cup flour
3/4 teaspoon baking powder
4½ oz flaked coconut
Quickly blend together the dough in a food processor or by hand. Shape to a sausage and cut in pieces. Thumb each out in aluminum baking tins. prick with a fork and leave in the fridge for about 30 minutes.
Stir butter and sugar fluffy for the filling, add one egg at a time while stirring and also stir in the concentrated juice. Mix flour with baking powder and stir this in together with coconut flakes.
Divide the filling in the pastry shells and bake at 347F for 20 to 25 minutes until nicely colored.
