CHEESE-BAKED SALMON WITH SHERRY SAUCE
Ostgratinerad lax med sherrysås
Serves 6
2 lbs salmon fillet
½ teaspoon salt
some pepper
1 small red bell pepper
3½ oz ripe, grated cheese
Sherry sauce:
0.4 cup sherry
1.6 cups water
1 chicken bouillon cube
1 fish bouillon cube
0.8 cup creme fraiche
3 tablespoons flour
1 teaspoon paprika
2 tablespoons chopped dill
Decoration:
1 tablespoon chopped dill
Preheat oven to 437F.
Place the salmon on a greased, oven-proof plate and sprinkle with salt and pepper. Chop the bell pepper. Sprinkle the bell pepper and cheese over the fish and place the plate in the lowest part of the oven to cook for about 20 minutes.
Sherry sauce:
Beat together all ingredients except for the dill in a saucepan. Bring to a boil and simmer for 3 minutes. Blend in the dill.
Sprinkle some dill over the fish and serve with the sauce, potatoes from the oven and perhaps some boiled green beans.
