CARROT AND BROCCOLI SOUP WITH CHEESE
Morots- och broccolisoppa med ost
Serves 4
2 onions, chopped
2 tablespoons butter
1 lb 5 oz frozen broccoli florets
7 oz grated carrots
4 cups vegetable bouillon
0.8 cup regular milk
0.8 cup grated cheese
1 teaspoon salt
some pepper
Sauté the onion in butter in a saucepan. Add broccoli florets and grated carrots and sauté without taking color. Add bouillon and boil for 10 minutes. Mix the soup in the saucepan until smooth, using a hand mixer. Add milk and bring to a boil. Blend in the cheese and flavor to taste with salt and pepper.
Serve the soup with bread.
