Oven-Baked Salmon with Almonds and Parmesan - Mandel- och parmesantoppad lax i ugn

OVEN-BAKED SALMON WITH ALMONDS
AND PARMESAN
Mandel- och parmesantoppad lax i ugn

Serves 2

10½ oz salmon fillets, preferably skin-on
approx 0.2 cup almonds
approx 0.2 cup roughly grated Parmesan cheese
½ garlic clove
finely grated zest and some juice from ½ lemon
½ bunch fresh basil
salt

For serving:
boiled potatoes
lemon
lettuce


Preheat the oven to 392F.

Put the salmon in an oven-proof pan. Chop the almonds and mix with Parmesan, finely grated garlic, lemon zest and finely chopped basil. Flavor to taste with lemon juice and salt. Spread this mixture over the fish and bake in the oven to an inner temperature of about 120F.

Fry the lemon, cut side down, in a frying pan until nicely colored. Serve the salmon with boiled potatoes and lettuce and squeeze some juice from the fried lemon on top.
