PESTO SALMON

Serves 4
4 pieces salmon fillet, each approx 4.4 oz
1 cup cream
0.4 cup low-fat creme fraiche
2 teaspoons potato starch
4 tablespoons canned pesto
salt, pepper
8 cherry tomatoes
1 tablespoon pine nuts
For serving:
boiled potatoes
green peas
Preheat the oven to 350F.
Put the salmon in a greased oven-proof pan. Mix cream, creme fraiche and potato starch in a saucepan and bring to a boil while stirring. Remove saucepan from heat and stir in the pesto. Flavor with salt and pepper. Pour the sauce over the salmon and sprinkle with sliced tomatoes. Cook in the oven until the fish is done, approx 30 minutes. Sprinkle with toasted pine nuts and serve with potatoes and green peas.
