SPICY CHUCK STEW WITH PORK AND APPLES
Kryddig högrevsgryta med sidfläsk och äpple

Serves 4

1 lb 12 oz beef chuck
salt, pepper
1 tablespoon oil
1 can whole, peeled tomatoes, 14 0z
1.6 cup veal bouillon
0.8 cup white wine
1 bay leaf
4 small onions
5½ oz smoked side of pork
4 sliced garlic cloves
2 sprigs fresh thymex ½ 

For serving:
1 large, firm, tart apple
1 tablespoon butter
1 tablespoon cane sugar
1 tablespoon chopped fresh thyme


Dice the meat in pieces, approx ½ inch ½ inch. Flavor on all sides with salt and pepper. Fry the meat until golden brown on all sides, preferably in a pot, but otherwise in a frying pan and then transfer to a pot. A pot it shall be! :-D

Add 1 can whole tomatoes, veal bouillon and wine. Add the bay leaf. Peel and split the small onions and add them to the pot. Cut the smoked pork in small dice, approx 1/4 x 1/4 inch or smaller still, and fry until crisp. Transfer the pork to the pot together with sliced garlic and a few thyme sprigs. Bring to a boil and cover with a lid. Simmer slowly until the meat is really tender, it could take about 1 hour or a little more. Flavor to taste with salt and pepper.

Dice the apple, approx the sice of the pork. Heat up some butter in a frying pan, put in the apple and sprinkle with sugar. Sauté, very carefully while stirring, together with some chopped thyme. Sprinkle this over the stew and serve with mashed potatoes.
