SPINACH CHICKEN WITH CREAM SAUCE
Spenatkyckling i gräddig sås
4 servings
1½ lb chicken fillets
salt, pepper
2 tablespoons butter
1 onion
0.8 cup heavy cream
0.4 cup water
1 tablespoons chicken fond
1 tablespoon Dijon mustard
3½ oz fresh baby spinach
10 cherry tomatoes
0.4 cup grated Parmesan cheese
Decoration:
fresh watercress
For serving:
potato wedges
sugar snaps
Heat the oven to 437F. Trim the chicken, rub all around with salt and pepper and Brown on all sides in a frying pan with butter. Peel and chop the onion, put in the frying pan and sauté for a few minutes. Add cream, water and fond and bring to a boil. Add mustard and spinach and bring the sauce to a boil. Put on tomato wedges and cheese and bake in the oven until the chicken is done, approx 15 minutes.
Decorate with watercress and serve with potato wedges and boiled sugar snaps.
