STRAWBERRY LEMON CRÈME PIE
Jordgubbspaj med citronkräm

1 pie, 6 servings

1.2 cups flour
2 tablespoons sugar
½ teaspoon vanilla sugar
5½ oz butter or margarine
1 egg yolk

Lemon crème filling:
0.8 cup heavy cream
0.4 cup lemon curd
1.1 lb strawberries


Preheat oven to 437F.

Mix flour, sugar and vanilla sugar and finely divide the butter into it. Add the egg yolk and work to a dough. Roll it out and place it in a round baking pan, diameter about 9 inches. Leave in the fridge for 30 minutes, then bake for 15 minutes and allow to cool.

Beat the cream and gently stir the lemon curd into it. Dab this into the pie crust and fill up with strawberries.
