SUNDAY BEEF ROLLS

Serves 4
8 minute steaks, approx 1.1 lbs
salt, pepper
2 pickled gherkins
2 carrots
1 onion
8 slices streaky bacon
2 tablespoons butter or margarine
1.6 cups water
Sauce:
0.8 cup heavy cream
1 tablespoon Chinese soy sauce
2 tablespoons veal fond
1 tablespoon Maizena corn starch
1 tablespoon blackcurrant jelly
Lay out the meat on a carving board and sprinkle with salt and pepper. Cut the gherkins in long pieces, peel and cut the carrots in long pieces too, and peel and cut the onion in wedges. Put a piece of each on each slice of meat and roll it up. Wrap a slice of bacon around each and secure with a toothpick. Brown all around in butter in a frying pan, start seamside down. Add water and slowly simmer, covered, for 40 minutes. Add remaining gherkin, carrot and onion to the pan and let it all simmer for a while longer.
Sauce:
Take up the rolls and keep warm. Add cream, soy sauce and veal fond and bring to a boil. Thicken and flavor to taste with jelly, salt and pepper. Strain the sauce.
Serve with boiled potatoes and veggies of your choice.
