Chicken Salad with Raspberries - Kycklingsallad med hallon

CHICKEN SALAD WITH RASPBERRIES
Kycklingsallad med hallon

A refreshing dish with marinated squash/zucchini, sweet raspberries and a fresh, cool dab of mint sauce. The raspberry vinegar can be substituted with balsamico.

Serves 4

1 grilled or fried chicken
1 fresh onion
1 squash/zucchini
½ teaspoon salt
1 tablespoon raspberry vinegar
1 tablespoon rapeseed oil
4 cups mixed lettuce leaves, approx 3½ oz
1.2 cups raspberries

Mint sauce:
0.8 cup soured cream
2 tablespoons finely chopped mint
some salt


Skin and de-bone the chicken and cut in pieces. Thinly slice onion and squash/zucchini and put it in a bowl. Stir in salt, vinegar and oil and leave for a few minutes. Mix with lettuce leaves, chicken and raspberries.

Blend the sauce together and serve that with the salad. This is a truly delicious chicken salad.
