Cod Stew - Torskgryta

COD STEW
Torskgryta

Cod is a very versatile fish and suitable for stews, soups and gratins. Here's a very simple stew with the taste of cloves, bay leaves, thyme and white wine.

Serves 4

2 lbs cod in slices
some whole white peppercorns
4 whole cloves
1 bay leaf
1 small sprig of thyme
½ tablespoon salt
0.2 cup white wine
1 can whole tomatoes, approx 14 oz
½ lemon, sliced


Rinse the fish, trim it off if necessary and put them in a shallow, wide saucepan. Crush the peppercorns and cloves and crumble the bay leaf and the thyme sprig. Sprinkle the spices and the salt over the fish and add wine. Drain the tomatoes and cut them in smaller pieces, then add them together with approx 0.2 cup of the tomato juice.

Cover with a lid, bring to a boil and simmer slowly on low heat for 6 to 8 minutes or until the fish is white, firm but done. Flavor with more spices if necessary and decorate with sliced lemon. Serve from the pot with boiled potatoes or whatever you like.

You can, of course, also use fillets, fresh or frozen.
