FISH FILLETS IN A SPICY SAUCE

Fish is lovely food, good for wallet and body. You can cook it in many various ways and that's why you never get tired of well-cooked fish. Here's a recipe for fish fillets in a delicious, flavorful sauce.
Serves 4
3 lbs fresh, whole fish
or 1 ½ lbs fillet of fish
from cod, haddock, pike-perch or pike
2 teaspoons salt
Sauce:
2 tablespoons butter or margarine
4 tablespoons flour
2 cups liquid (fish liquid, cream and milk)
2 to 3 tablespoons tomato paste
1 tablespoon fresh lemon juice
1 tablespoon grated raw onion
1 finely chopped green bell pepper
some dried oregano
salt and white pepper if needed
1 egg yolk
1 cup long-grained rice
2 cups water
approx 6 oz frozen green peas
grated cheese
Rinse and trim the fish and cut out fillets if you don't already have it filleted. Put the fillets on a greased, oven-proof plate and salt lightly. Cook in the oven at 390F for about 10 minutes. Pour off the liquid and save it for the sauce.
Bring the fish remains to a boil with an onion, some whole white peppercorns and allspice berries and some water and salt. Boil for 10 to 15 minutes, strain the liquid and use it for the sauce.
Boil the rice.
For the sauce you sizzle flour and fat together in a saucepan. Dilute with fish liquid and milk or cream, little by little, to a thick and shiny sauce. Flavor with tomato paste, lemon, onion, bell pepper, oregano and salt and pepper (if needed). Stir in the egg yolk and do not let the sauce boil after that.
Grease an oven-proof pan. Mix the rice with the peas and put it in the bottom. Gently transfer the fish onto the rice, pour on the sauce and sprinkle with cheese. Bake in the oven at 480F for about 15 minutes or until the surface is lightly colored and everything is heated through.
