French Farmer's Soup - Fransk bondsoppa

FRENCH FARMER'S SOUP
Fransk bondsoppa

A real French farmer's soup always contains lentils and beans. Here is a quicker version with lentils only. Serve with a good, hearty bread.

Serves 4

2 onions
2 carrots
1 piece celeriac/celery root, approx 3½ oz
5½ oz smoked pork
butter or margarine
4 cups chicken bouillon
1.4 cups red lentils
2 teaspoons basil
some black pepper
0.8 cup crème fraîche
0.2 cup chopped parsley
salt


Peel onions, carrots and celeriac/celery root and dice it all finely. Dice the pork and sautée in fat in a pot. Add the vegetables, pour on the bouillon and bring to a boil. Add lentils and flavor with basil and pepper. Boil for 10 minutes, stir in crème fraîche and parsley and flavor with salt.

The pork can be substituted with bacon or kassler (see one of my info posts for more info on kassler).
