MUSTARD COD

When you cook frozen fish, it's best if you thaw it only just enough to be able to cut it in pieces. Mustard and leek gives the wonderful taste. This is one of the family's favorite fish recipes, it's so good!
4 servings
Approx 14 oz frozen fillet of cod
2 leeks
1 tablespoon butter or margarine
1 teaspoon salt
some white pepper
1½ tablespoon mustard (here I use the Swedish, sweeter type)
0.4 to 0.8 cup cream, 15% or the like
Thaw the fish lightly.
Rinse and trim the leeks very thoroughly and cut them in fine shreds. Brown the leek in some fat until tender. Flavor with salt and pepper. Slice the fish and spread some mustard on each slice. Alternate leek and fish in an oven-proof pan or a shallow saucepan. Pour on the cream.
Put the pan in the oven at 440F for about 20 minutes or until the fish seems done. Serve straight from the pan with boiled rice or boiled potatoes.
