OVEN KASSLER
Kassler i ugn

For information on "kassler" (warm smoke-cured loin of pork), see one of my "information-text" posts in the blog. This is a festive dish with only a couple of ingredients, and it's quick and easy to make.

Serves 4

8 slices kassler, in all approx 1 1/3 lbs
2 red or green bell peppers, or why not one of each?
2 tablespoons butter or margarine
0.8 cup crème fraîche
2 tablespoons strong, non-sweet mustard
0.4 cup grated, strong cheese


Grease an oven-proof pan. Split the bell peppers and trim carefully. Shred them and sautée them in some fat in a frying pan and transfer to the oven pan. Put the kassler slices on top.

Stir crème fraîche with mustard and spread this over the meat. Sprinkle with grated cheese and bake in the oven at 440F, if the pepper mix is cold, and at 480F if it's still warm, for about 15 minutes or until the cheese has melted, is nicely colored and heated through.

If you want to, you can bake split tomatoes in a pan on the side. Sprinkle them with some salt and some chopped greenery before serving with boiled rice, baked potatoes or pasta and a salad.
