Potato Salad with Mustard Dressing - Potatissallad med senapsdressing

POTATO SALAD WITH MUSTARD DRESSING
Potatissallad med senapsdressing

New potatoes make this salad luxurious. Add olives, tomato and rocket and conjure up a salad with a delicious mustard dressing.

Serves 4

1 lb 8 oz boiled, cold new potatoes
approx 7 oz mixed small tomatoes
1 red onion
0.9 oz rocket
approx 20 black olives
0.4 cup shredded, sun dried tomatoes
0.4 cup shredded basil leaves

Dressing:
2 teaspoons Dijon mustard
1 garlic clove
½ teaspoon sugar
approx ½ teaspoon salt
1 tablespoon white wine vinegar
coarsely ground black pepper
0.2 cup olive oil
0.2 cup rapeseed oil


Split the potatoes and put them in a bowl. Split the tomatoes. Peel and thinly slice the red onionand put it in the bowl with the rocket, sun dried tomatoes and basil, but don't blend yet.

Stir mustard with crushed garlic, sugar, salt, vinegar and black pepper. Add the oils dropwise while stirring. Pour the dressing over the salad in the bowl and blend gently. Transfer the salad to a serving bowl and voilà.
