STRAWBERRY COFFEE CAKE

This is a juicy, fresh-tasting cake with strawberries, which really makes it different and special. You can very well use a little overripe strawberries for this cake, and you can vary the flavoring to your liking.
1 cake in a pan holding 6 cups
5.3 oz butter or margarine
3 eggs
1.2 cup brown sugar
2 teaspoons cinnamon
2 teaspoons ginger
some grated nutmeg
1.6 cup flour
1 teaspoon bicarbonate of soda
0.4 cup soured cream
0.4 cup mashed, fresh strawberries,
preferably a slightly overripe
0.4 cup coarsely chopped walnuts
Melt the fat and allow to cool. Beat eggs and brown sugar well until the sugar has melted properly. Mix spices, flour and bicarbonate well. Stir the melted fat into the egg mixture, then add soured cream, strawberries and walnuts and blend well. Last, stir in the flour mixture and blend it in well.
Pour the batter in a well greased and breaded baking pan and bake at 350F on the lowest shelf of the oven for about 1 hour or until nicely colored, puffed up and is done. It's a juicy cake.
Gently loosen the cake around the sides with a sharp knife. Leave it in the pan for a while and then unmould. Allow to cool well before putting it in a can or the like.
