SUMMER FISH
Sommarfisk
Fried fish can be varied in many, many ways. It's good to serve a veggie mix with the fish, it's nice with the crispy surface.
Serves 4
1 1/3 lbs fish fillets from cod, haddock or saithe
2 teaspoons salt
½ teaspoon white pepper
1 egg
2 to 3 tablespoons dried breadcrumbs
1 tablespoon butter or margarine
1 onion
1 can sliced mushrooms, approx 7 oz
4 tomatoes
1 tablespoon butter or margarine
1 teaspoon salt
1/4 teaspoon white pepper
1 teaspoon dried oregano or basil
some cayenne
0.6 cup cream, 15% fat or the like
½ leek
Cut the fish in serving-sized pieces and flavor with salt and pepper. Beat the egg. Dip the fish in egg and then in breadcrumbs. Brown the fat in a saucepan and fry the fish until golden. Take up and keep warm.
Peel and chop the onion. Drain the mushrooms. Cut the tomatoes in wedges. Sauté onion, mushrooms and tomatoes in some fat in a frying pan and sprinkle with salt and the other spices. Dilute with cream and simmer for a few minutes.
Rinse and trim the leek and shred it. Put the fish and the veggie mix on a serving plate, sprinkle with leek and serve with potatoes or rice.
