CABBAGE SOUP WITH PARMESAN CHEESE
Kålsoppa med parmesanost
Serves 4
14 oz Savoy cabbage (not sure of the
English name)
14 oz kale or black cabbage (cavolo nero)
7 oz cauliflower
1 onion
2 garlic cloves
2 tablespoons oil
3 tablespoons tomato paste
some chili flakes
salt, pepper
3.2 cups water
2 tablespoons concentrated vegetable fond
Topping:
1.7 oz Parmesan cheese
5 oz streaky bacon, diced (optional)
Shred the Savoy cabbage, kale, cauliflower, onion and garlic finely. Sauté in oil until tender. Add tomato paste, chili flakes, salt and pepper and sauté a few minutes more. Add water and fond and boil for about 10 minutes. Flavor to taste with salt, pepper and chili flakes.
Decorate the soup with grated Parmesan cheese and optional crisp bacon.
