FRIED PORK CHOP WITH APPLES
AND RED CABBAGE
Stekt fläskkotlett med sky, äpple och inlagd rödkål
Serves 4
4 pork chops
1 tablespoon butter
1 teaspoon salt
some pepper
2 tablespoons dark fond, e.g. beef fond
3 tablespoons corn starch, Maizena type
1 teaspoon Chinese soy sauce
canned red cabbage, approx 16 oz
2 red apples
Decoration:
chopped parsley
Make small cuts in the rind of the pork chops and fry them in butter over medium heat, approx 3 minutes on each side. Pour some water in the frying pan and simmer the pork chops for a little while. Flavor with salt and pepper.
Measure the pan juices and pour in a saucepan. Add water until you have 1.6 cups. Add the beef fond and bring to a boil. Beat in the thickening and simmer for 1 minute. Flavor the sauce to taste with salt, pepper and soy sauce.
Heat the canned red cabbage and finely dice the apples. Serve the pork chops with boiled potatoes, sauce, red cabbage and diced apples. Sprinkle with chopped parsley.
