CHICKEN ROLLS WITH CHEESE,
TOMATO AND HERBS

Serves 2
4 chicken thigh fillets
butter for frying
salt, pepper
3½ oz flavored cream cheese,
preferably something "peppery"
3 sundried tomatoes in oil
0.6 cup heavy cream
1 tablespoon tomato paste
2 tablespoons ketchup
½ teaspoon French herbs
pinch of persillade, which is a
mixture of garlic, parsley and sea salt
salt, pepper
some small fresh tomatoes, like
cherry or baby tomatoes
For serving:
boiled pasta, roast potatoes
or rice
mixed salad
Flavor the chicken with salt and pepper, spread with cream cheese and roll them up. Attach with a toothpick. Brown in butter in a hot frying pan and transfer to an oven-proof pan.
Beat the cream and add remaining cream cheese, tomato paste, ketchup, spices and split sundried tomatoes. Pour this over the chicken and cook in the oven at 435F for about 25 minutes or until completely done. Near the end you put on split tomatoes and let them get slightly tender. Decorate with basil and serve as above.
