PORK CHOPS WITH POTATOES AND
MUSTARD SAUCE
Fläskkotletter med potatis och senapssås
Serves 2
9 oz "floury" potatoes, e.g. King Edward
2 pork chops
oil or butter for frying
salt, pepper
2 sprigs fresh rosemary
0.6 cup creme fraiche
0.2 cup sweet and strong,
coarsely ground mustard
Wipe off the chops and brown in a hot pan with oil or butter. Flavor with salt and pepper. Chop a rosemary sprig and sprinkle on top of the meat while frying and put a whole sprig in the fat in the pan. Fry the meat for about 3 minutes on each side.
When ready, take them out and keep warm. Add creme fraiche and mustard in the pan, blend well and flavor to taste with salt and pepper.
Serve with boiled potatoes and some favorite veggie of yours. Myself I love a tomato and onion salad with this kind of food.
