PASTA SOUP WITH BACON
Pastasoppa med bacon
Serves 4
6 cups water
2 vegetable bouillon cubes
9 oz broccoli
2 carrots
1 leek
1.2 cups dried pasta of your choice
0.4 cup creme fraiche
1 teaspoon apple cider vinegar
5 oz streaky bacon
1 tablespoon Maizena cornstarch
0.4 cup grated cheese
salt, pepper
thyme
Bring water and bouillon cubes to a boil in a pot. Split the broccoli into florets (also use the stem, please, cut in suitable pieces). Peel and slice the carrots, rinse and slice the leek. Add the vegetables to the pot and boil for 5 minutes. Add pasta and boil for the suggested time. Stir in the creme fraiche and vinegar, thicken the soup and boil for 3 minutes.
Dice the bacon and fry until crisp. Add bacon and grated cheese to the soup and flavor to taste with salt and pepper. Sprinkle with thyme.
