CREAMY SALMON AU GRATIN
WITH WHITE WINE AND SHRIMPS

Serves 4
1.1 lb salmon fillet, cut in serving pieces
1 teaspoon salt
some pepper
0.4 cup grated cheese
Mashed potatoes:
use your own recipe
Sauce:
1 tablespoon butter
1½ tablespoons flour
0.8 cup cream
0.8 cup white wine
1 vegetable bouillon cube
2 teaspoons tomato paste
2 tablespoons chopped dill
1 teaspoon salt
some pepper
7 oz un-peeled shrimp
Decoration:
shrimps
dill
bleak roe if desired
For serving:
lemons
lettuce
Start making the mashed potatoes according to your own recipe. Preheat the oven to 480F.
Boil the salmon pieces in salted water for a couple of minutes. Take it up (gently so that it doesn't break) and transfer to an oven-proof dish. Flavor with salt and pepper.
Melt the fat in a saucepan, stir in the flour and dilute with cream. Bring to a boil while stirring and simmer for a few minutes. Add remaining ingredients for the sauce while stirring. Flavor to taste with salt and pepper. Peel and split the shrimps and blend them in.
Pipe or dab out the potatoes around the fish. Pour the sauce over the fish and sprinkle with cheese. Put it in the bottom of the oven for 10 to 15 minutes until heated through and nicely colored. Decorate with shrimps, dill and bleak roe if desired. Serve with lemon wedges and lettuce.
