CREAMY FILLET OF PORK STEW
WITH MUSTARD AND CHIVES
Krämig fläskfilégryta med senap och gräslök
Serves 4
Stew:
1.1 lb fillet of pork
2 tablespoons butter
1 teaspoon salt
some pepper
0.8 cup pan juices from frying
0.8 cup cream
2 tablespoons French mustard
2 tablespoons flour
2 tablespoons concentrated veal fond
3½ oz shredded smoked ham
3 tablespoons chopped chives
Trim and slice the meat and fry in butter in two rounds so there's not too much meat in the pan at once. Flavor with salt and pepper. Rinse the pan with 0.4 cup water each round and pour the pan juices in a saucepan. Add cream, mustard, flour and veal fond and bring to a boil while stirring. Add the meat and simmer for a few minutes. Flavor to taste with salt and pepper.
Lightly fry the ham and add it to the pot. Sprinkle with chives and serve with e.g. boiled potatoes, green asparagus and a salad.
