FALU SAUSAGE AU GRATIN WITH MUSTARD CREAM
Falukorvsgratäng med senapsgrädde
Serves 4
14 oz Falu sausage or some
suitable replacement
1 lb "floury" potatoes, e.g. King Edward
3 tomatoes, approx 10½ oz
2 squash (what's the plural?), approx 1 lb 5 oz
0.8 cup cream of your choice
1 garlic clove
2 tablespoons strong mustard
1 teaspoon dried basil
½ teaspoon salt
some pepper
0.8 cup grated Parmesan cheese
Decoration:
fresh basil
Preheat oven to 437F.
Pull off the sausage skin and peel the potatoes. Slice sausage and tomatoes in thin slices and squash and potatoes in VERY thin slices. Alternate sausage, potatoes and vegetables in an oven-proof pan. Mix cream, garlic, mustard, basil, salt and pepper and pour this over. Sprinkle with cheese.
Put in the oven and cook until the gratin is nicely colored and the potatoes are tender, about 30 minutes. Decorate with fresh basil.
