Grilled Fillet of Pork with Roast Potato Salad - Grillad fläskfilé med rostad potatissallad

GRILLED FILLET OF PORK WITH
ROAST POTATO SALAD
Grillad fläskfilé med rostad potatissallad

1 fillet of pork, approx 1.1 lb
2 tablespoons mango chutney
3 tablespoons oil
2 teaspoons smoked paprika

Spices:
½ teaspoon cayenne
3/4 teaspoon black pepper
3/4 teaspoon cumin
some ground allspice
1 teaspoon salt

Roast potato salad:
2.2 lbs new potatoes, skin-on
1 tablespoon oil
1 teaspoon salt
some ground black pepper
4 spring onions
1½ oz baby spinach
5½ oz sugarsnaps


Scrub and split the potatoes. Put it in a roasting pan, mix with oil and sprinkle with salt and pepper. Cook in the oven at 437F for about 30 minutes until golden.

Mix oil and smoked paprika in one bowl and spices and salt in another. Brush the meat with the paprika oil, then sprinkle the spicy salt mixture over the whole fillet.

Grill the meat about 4 inches from the heat (medium heat) and make sure it is cooked through but not burned. Turn it over now and then while grilling. Inner temperature should be 154F, takes about 20 minutes.

Brush the meat with mango chutney and leave for about 30 minutes before thinly slicing it.

Mix the potatoes with shredded spring onions, baby spinach and split sugarsnaps. Serve with a garlic sauce.
