CHOCOLATE SQUARES WITH PEANUTS
AND CARAMEL SAUCE
Chokladrutor med jordnötter och kolasås
10 squares
Chocolate layer 1:
4½ oz butter
0.6 cup sugar
0.2 cup white molasses
0.6 cup flour
4 tablespoons cocoa
1 pinch of salt
2 eggs
0.4 cup heavy cream
Layer 2:
0.4 cup salted peanuts
1.7 oz dark chocolate
7 oz cream cheese, Philadelphia type
0.2 cup caramel sauce
Topping:
0.2 cup salted peanuts
0.2 cup caramel sauce
Layer 1:
Preheat oven to 347F. Line an oblong baking pan, approx 12 x 4 inches, with baking paper. Beat butter and sugar until soft and add molasses, flour, cocoa and salt. Blend together. Stir in one egg at a time and last the cream. Stir it all until smooth and pour in the pan. Bake in the middle of the oven for 15 to 18 minutes (the cake should be moist and sticky). Allow to cool, then leave in the fridge to set.
Layer 2:
Roughly chop up the peanuts. Melt the chocolate over a hot waterbath and allow to cool slightly. Stir cream cheese, caramel sauce, chocolate and peanuts a little "carelessly" and distribute this over the chocolate layer in the pan.
Topping:
Top the cake with finely chopped peanuts and drizzle with caramel sauce. Cut in squares and serve.
You can prepare these lovely squares 2 days before serving.
Enjoy!
Bella
