STRAWBERRY ALMOND CUPS

35 pastries
Dough:
1.6 cups flour
0.4 cup potato starch
0.2 cup sugar
7 oz cold butter
Filling:
3 eggs
0.6 cup sugar
grated zest from 1 lemon
4½ oz butter
3½ oz grated almond paste
0.4 cup flour
15 strawberries for filling
and decoration
Decoration:
powdered sugar
Quickly work the dough together in a food processor. Shape to a roll and cut it in 35 pieces. Thumb them out in steady baking tins, paper or metal. Prick them with a fork and put them in the fridge for a while.
Beat eggs and sugar until fluffy. Add lemon zest. Melt the butter and add the egg batter, grated Almond paste and sifted flour.
Take out the pastry shells and put them on paper-lined baking plates. Place a piece of strawberry in each plus some filling (stir the filling now and then while it waits in the bowl). Heat the oven to 392F and bake for about 13 minutes. Cool.
Decorate with strawerries and sift with powdered sugar.
