BELL PEPPER-FILLED CHICKEN ROLLS
IN CREAM SAUCE

Serves 4
1.1 lb thinly sliced chicken breast fillets
salt, pepper
3½ oz cream cheese, unflavored
0.4 cup strong, grated cheese
3 grilled bell peppers, approx 9 oz
butter and oil for frying
Sauce:
1 cup soured cream
0.6 cup water
1½ tablespoon concentrated
chicken fond
1½ tablespoon Chinese soy sauce
pinch of sugar
For serving:
fresh basil
fettuccine or tagliatelle pasta
green salad
Spread out the chicken slices and sprinkle with salt and pepper.
Mix cream cheese and grated cheese and divide the mix on the chicken. Shred the grilled bell peppers and distribute them on top. Roll up and secure with toothpicks. Brown on all sides in a large frying pan with butter and oil.
Sauce:
Mix soured cream, water, chicken fond and soy sauce. Pour this in the frying pan with the chicken and bring to a boil. Put a lid on and lower the heat. Simmer for about 20 minutes. Gently turn the rolls around occasionally. Flavor the sauce to taste with salt, pepper and a small pinch of sugar.
Decorate with basil and serve with pasta and a green salad.
