LOIN OF PORK STEW CARRIBBEAN STYLE
WITH LIME AND COCONUT
Karibisk karrégryta med lime och kokos
Serves 6
2,8 lbs loin of pork
2 tablespoons Chinese soy sauce
3 chopped garlic cloves
2 tablespoons oil
1 teaspoon salt
1 can coconut milk, approx 14 oz
0.4 cup water
0.2 cup sweet chili sauce
grated zest from 1 lime
fresh juice from ½ lime
1 teaspoon sambal oelek
1 tablespoon green curry paste
1½ tablespoons corn starch, Maizena type
Topping:
salted peanuts
Thai basil
Finely shred the meat. Mix with soy sauce and garlic. Fry the meat in oil and flavor with salt. Add coconut milk, water, sweet chili sauce, lime zest and juice, sambal oelek and green curry paste and simmer for about 7 minutes. Stir the corn starch with some cold water and add this to the pot. Simmer for another 3 minutes or so. Sprinkle with peanuts and basil.
Serve with rice and wok-fried vegetables, e.g. broccoli, sugar snaps and sweet pepper.
