LEMON PORK SCHNITZEL WITH PEAS
AND CREAM SAUCE
Citronschnitzel med krämig sås och
gröna ärter
Serves 4
Schnitzel:
1.1 lbs boneless pork,
thinly sliced
0.4 cup flour
2 eggs
0.4 cup dried breadcrumbs
0.2 cup oil
1 teaspoon salt
some pepper
Sauce:
1.2 cups water
2 tablespoons concentrated
veal fond
0.8 cup creme fraiche
3 tablespoons flour
2 tablespoons Chinese soy sauce
For serving:
1 sliced lemon
2 tablespoons pickled capers
boiled green peas
Pour all ingredients for the sauce in a saucepan and bring to a boil while stirring. Simmer for a few minutes.
Coat the meat first with flour, then with beaten egg and last with breadcrumbs. The layer should be thick. Then fry the schnitzels in lots of oil for about 3 minutes on each side. Flavor with salt and pepper.
Serve with sliced lemon and capers, boiled or fried potatoes, the sauce and green peas.
