ITALIAN SAUSAGES WITH POTATO PESTO MASH

Serves 4
1.1 lbs Italian sausages, e.g. salsiccia
2.2 lbs "floury" potatoes, King Edward type
2 tablespoons butter
½ teaspoon salt
some pepper
0.8 cup regular milk
3½ oz pesto, home made or canned
0.8 cup grated Parmesan cheese
For serving:
tomato salad (tomatoes and red onions)
Decoration:
fresh basil
Peel the potatoes and cut in pieces. Boil until tender in salted water for about 10 minutes. Pour off the water and mash the potatoes with butter, salt and pepper and add milk to your liking. Add pesto and cheese and flavor to taste.
Serve with fried sausages, mashed pesto potatoes and tomato salad. Decorate with fresh basil.
