POTATO PATTIES WITH LINGONBERRIES
Potatisbullar med rårörda lingon
Serves 2
14 oz boiled potatoes
2 eggs
0.2 cup frozen parsley
salt, pepper
0.4 cup dried breadcrumbs
butter
Lingonberries:
9 oz frozen lingonberries
0.4 cup sugar
For serving:
fried pork or bacon
If the potatoes are cold, grate them on the finer part of the grater. If just boiled, rice them. Mix them with eggs and parsley and flavor to taste with salt and pepper. Shape into 6 equally sized balls and flatten them out. Coat on both sides with breadcrumbs and fry until golden in oil or butter over medium heat.
Mix lingonberries and sugar, blend and let the sugar melt in room temperature.
Serve with fried pork or bacon plus the lingonberries.
