LEMON GINGER CAKE
Citronkaka med ingefära
1 cake, 10 pieces
5½ oz butter
0.8 cup sugar
3 eggs
2 tablespoons fresh, grated ginger
grated zest and fresh juice
from 1 lemon
1.2 cups flour
1 teaspoon baking powder
butter for the baking pan
Preheat oven to 347F. Grease and flour a baking pan of about 6 cups.
Beat together room-tempered butter and sugar until fluffy. Add the eggs, one by one. Add ginger, lemon zest and juice together with flour, mixed with baking powder. Pour the batter in the pan and bake in the lower part of the oven for about 45 minutes. Try with a cake tester. Leave in the pan for a while before unmoulding.
