LOIN OF PORK STEW WITH MUSHROOMS
AND SMOKED PORK

Serves 4
1 onion
2 garlic cloves
1.7 lbs boneless loin of pork
olive oil
salt, pepper
4 carrots
1.6 cups water
1.2 cups red wine
1 vegetable bouillon cube
3 tablespoons tomato paste
5½ oz fresh mushrooms
3½ oz smoked side of pork
2 teaspoons fresh lemon juice
Parsley sauce:
0.6 cup sour cream
0.6 cup mayonnaise
0.4 cup finely chopped leafy parsley
salt, pepper
Chop the onion and crush the garlic. Sauté it all in a frying pan until smooth and glossy. Transfer to a pot. Dice the meat into 1 x 1 inch cubes or something like that. Fry them little by little in a frying pan and add salt and pepper. Transfer to the pot. Slice the carrots and add half of them to the meat. Set the rest aside. Add water, red wine, bouillon cube and tomato paste. Cover the pot and simmer for about 2 hours, until the meat is tender.
Split the mushrooms and dice the smoked pork, then fry them and add remaining carrots, mushrooms and pork to the meat when about 20 minutes remain. Flavor to taste with lemon juice.
Mix sour cream, mayonnaise, parsley, salt and pepper to a sauce and serve it with the stew, boiled potatoes and broccoli.
