SAUSAGE WITH MUSTARD COLESLAW
AND PICKLED RED ONION
Korv med senapscoleslaw och picklad rödlök
Serves 4
8 sausages of your choice,
approx 1 lb
Pickled red onion:
1 red onion
1 tablespoon pickling vinegar
(in Sweden 12% is the most common)
2 tablespoons sugar
3 tablespoons water
Coleslaw:
10½ oz shredded green cabbage
0.8 cup low-fat creme fraiche
1 tablespoon vinegar
2 teaspoons strong mustard
some sugar
some salt
some pepper
Thinly slice the red onion. Mix pickling vinegar, sugar and water and leave the red onion in the liquid for at least 30 minutes.
Mix all the ingredients for the coleslaw.
Fry the sausages and serve them in breads with the onion, lettuce leaves and mustard.
