Aubergine with Parsley, Parmesan and Garlic - Aubergine med persilja, parmesan och vitlök

AUBERGINE WITH PARSLEY, PARMESAN
AND GARLIC
Aubergine med persilja, parmesan och vitlök

This dish is fried in a pan just before serving. The sliced aubergine is excellent to serve in a bun with tzatziki.

Serves 4

2 aubergines/eggplants
2 teaspoons salt
1 3/4 oz parmesan
1 bunch parsley
3 garlic cloves
0.8 cup dried breadcrumbs
some black pepper
2 eggs
0.4 cup oil


Cut the aubergines lengthwise in thin slices. Sprinkle salt on both sides, put them on paper towels and leave them for 10 minutes so that most of the liquid disappears.

Grate the parmesan and chop parsley. Mix cheese, parsley and crushed garlic, add breadcrumbs and flavor with pepper. Wipe off the aubergine slices and dip them in beaten egg, then in the breadcrumb mixture.

Fry in oil in a frying pan for about 2 minutes on each side and serve right away.
