Bell Pepper Chicken - Paprikakyckling

BELL PEPPER CHICKEN
Paprikakyckling

Goose and duck are traditional in November in Sweden, but if you want a different and maybe not so expensive dish I can recommend this chicken. Easy to make, good and festive. 

Serves 4

1 chicken, approx 3 lbs
2 tablespoons butter or margarine
1 teaspoon salt
some paprika

2 red bell peppers
2 green pell peppers
2 tablespoons chopped parsley


Split the chicken. If the innards come with it, save them. Rinse and wipe it all off. Cut the innards in small pieces. Rinse and split the bell peppers and carefully remove all the seeds. Shred them. Grease an oven-proof pan and put the bell peppers in the bottom.

Brown the chicken halves well on both sides in fat in a frying pan. Do not flavor until after the browning. Put them on top of the bell peppers. Brown the cut innards and put this in the pan. Put the pan in the oven at 350F for about 35 minutes or until properly done. If it's not, increase the heat to 390F and continue cooking for about 5 minutes.

Sprinkle with parsley and serve straight from the pan with boiled or browned rice, a salad and a good bread.
