Pear Chicken - Päronkyckling

PEAR CHICKEN
Päronkyckling

This is a very practical dish, suitable for guests as it can be made in advance. This tempting pear chicken under a fragrant, delicious creamy cover is exactly one of those "wish dishes" that you put in the oven while you make the salad and slice the bread.

Serves 6 to 8

2 grilled or fried chickens
1 can pears, approx 1 3/4 lbs
0.8 cup heavy cream
½ tablespoon ginger
½ teaspoon salt
1 egg yolk


De-bone the chicken and cut in pieces. Drain the pears and cut them in pieces, Put them in a greased, oven-proof pan and put the chicken on top. Beat the cream and mix with ginger, salt and egg yolk. Spread the mixture over the chicken and bake in the oven at 480 for 10 to 15 minutes or until the chicken is heated through and the cover is nicely covered.

Serve with a salad and bread.
