BOILED SALMON IN CREAM SAUCE
Kokt lax i krämig sås
This is a very practical recipe which doesn't require a lot of dishes, since the fish and the sauce are made at the same time. Roe and fresh dill towards the end completes the luxury.
Serves 4
4 serving-sized pieces of salmon (each weighing 4½ oz)
0.4 cup water
3 tablespoons lobster fond
0.6 cup cream, 15% fat or the like
0.4 cup crème fraîche
2 teaspoons mustard of your choice, not necessarily French
3 tablespoons red roe
1 bunch finely chopped dill
salt if needed
Stir together water, lobster fond, cream, crème fraîche and mustard in a shallow, wide saucepan. Boil the sauce for a minute or so while stirring. Put the salmon in the sauce and simmer on low heat, covered, for about 10 minutes or until the fish is done. Remove from heat.
Gently lift up the fish and stir roe and dill into the sauce. Flavor to taste and add salt if necessary. Put the fish back in the sauce and serve with boiled, riced potatoes and boiled cauliflower or broccoli.
