CHILI-FLAVORED CHICKEN PASTA
Chilikryddad pasta med kyckling

Some luxury for an ordinary week day, perhaps? Chicken fillets with some heat, served with pasta? Would that be OK?

Serves 4

14 oz pasta, e.g. spaghetti (can very well be wholemeal pasta)
2 chicken fillets
1 carrot
1 red bell pepper
1 red chili fruit
2 tablespoons rapeseed oil
0.4 cup finely shredded leek
0.8 cup finely shredded black radish
approx 20 fresh basil leaves
0.8 cup coconut milk
salt, white pepper


Boil the pasta in lightly salted water. Finely shred carrot and bell pepper, thoroughly trim the chili fruit and cut in very thin slices. 

Finely dice the chicken fillets. Heat up the oil in a frying pan and brown the meat until golden. Add vegetables and basil and stir. Pour on the coconut milk and let it all boil for a couple of minutes. Flavor with salt and pepper and serve with the pasta and a salad.
