Chicken and Spinach Pasta - Kyckling- och spenatpasta

CHICKEN AND SPINACH PASTA
Kyckling- och spenatpasta

Serves 2

7 oz chicken fillets
1½ tablespoons oil
1 finely grated garlic clove
½ chopped red onion
salt, pepper
5 oz fresh spinach
0.2 cup low-fat crème fraîche
0.2 cup milk
4 pieces shredded sundried tomatoes
4 oz pasta of your choice
0.2 cup grated parmesan


Cut the chicken in smaller pieces and brown them in oil together with finely grated garlic and chopped red onion. Flavor with salt and pepper. Add spinach and let it fry with the chicken mixture for a few minutes. Stir in crème fraîche and milk and heat it all through. Add sundried tomatoes and flavor to taste with salt and black pepper.

Mix with freshly boiled pasta and grated parmesan and serve with a salad.
