FALU SAUSAGE WITH ONIONS AND MUSHROOMS
Falukorv med lök och svamp

This is an easy-made and delicious everyday dish with Falu sausage as the main ingredient. The shallots lend their lovely taste to the dish.

Serves 4

14 oz to 1 lb Falu sausage or substitution like
Frankfurter or Strasbourger sausage 
6 shallots
3½ oz fresh mushrooms
1 tablespoon butter or margarine
3 tablespoons mustard 
0.8 cup cream, 12% fat or the like
0.4 cup water
½ meat bouillon cube
0.2 cup chopped parsley
salt, pepper
½ teaspoon Italian salad spice

chopped parsley


Slice the sausage and cut each slice in two. Peel the shallots and clean the mushrooms. Split onions and mushrooms if they're large. Melt half of the fat in a large frying pan. Fry the sausage, not all at once, until colored and almost done, about 5 minutes. Transfer to a plate and keep warm.

Melt remaining fat and sauté onions and mushrooms for about 5 minutes. Add mustard, cream, water, crumbled bouillon cube and parsley. Cover and simmer slowly for about 5 minutes. Flavor with salad spice and also salt and pepper to taste. Gently add the sausage and simmer for a few minutes in the sauce.

Sprinkle with parsley and serve with tagliatelle or mashed potatoes, green beans and/or a salad.
